When Ethen Dairo Caballero Capito was born on February 2009, his parents Roque and Daisy were overwhelmed with joy and love for they have waited a lot of years for him to come into this world. It didn’t take long for his parents to realize that he was a blessing having been conceived after Daisy finally joined Roque here in Canada in April 2008.
On Saturday, August 15, 2009, was another special day for he was baptized at St. Francis De Sales Parish, witnessed by his parents, 6 pairs of godparents, relatives and friends, and followed by a pompous and lavishly prepared reception at his parents’ residence in Burnaby, BC that started at 11:00 AM on Saturday until 2:00AM on Sunday. About 200 friends and relatives came in droves and enjoyed the celebration as they were treated to about 30 different recipes, drinks of any kind and desserts of fruits, pies, cakes, bibingka, salad varieties, pastries, palitaw, cassava cake, maja blanca, and so many other foods that one can only think of during weddings. Food was abundant which included recipes like dinuguan, karekare, pancit bihon, pancit palabok, pinakbet, fried and grilled chicken, lechon kawali, chopsuey, spaghetti, embutido, fried posit, fish fillet, chicken inasal, beef broccoli, kilawin, sinampalokan kambing, ham, fried tilapia, beef and goat caldereta, pastil, egado, lumpia shanghai, fried smelt, shrimps rebusado, dinakdakan, grilled pork ribs and plain & fried rice. Later that night in the lawn with specially set-up tents, with beer and liquor, the boys partook of a lot of pulutan like large grilled tuna direct from General Santos City, kaldereta, pork barbecue, pinapaitan, etc. and while inside the house, the ladies and children talked and strut their voices at videoke singing as they ate desserts after a few rounds of the sumptuous food prepared by a chef from Calgary and the expert cooking of his parents Roque and Daisy, his aunts & uncles Lorna and Renato Tibig, Conrado and Venice Capito. Godparents are Redentor Idia and Rhona Cabugao, Philip Fabia and Hilda Coronel, Elmer Hereldo and Marivic Gumboc, Richard Jaleco and Rowena Palma, Dennis Rafer and Lida Reid, Rafael Carolino and Lalaine Ligraner.
Roque is a Physical Therapy graduate and hails from Dagupan City while Daisy is a Registered Nurse having worked at Nazareth General Hospital in Dagupan City and Israel prior to coming here and hails from Brgy. Bateng, Mangaldan, Pangasinan. Daisy’s father is the former SPO4 Eduardo Caballero and the niece of incumbent Mun. Councilor Bernabe Cervas.
